Today I woke up with the sun, after a long time, yes, I am not an early riser but some days are different. It snowed yesterday, for few hours but the cars, trees and grass are still covered with the fine sheet of snow, the tar covered roads which has now a thin sheen of snow are glistening in the first flicker of sun rays. And as the morning slowly breaks into bright crimson day with promise of sunshine, I decided not to skip my daily routine of morning walk.

The trail is beautiful, lined with tall pine trees and the dried pine needles covered most of the grass, small brooks sneaking at places, and snow still lingers over some of the rocky boulders. The air is cool and crisp and as I walked along the winding trail, all alone, absorbed in my thoughts, I reflect on how the morning is so different in my country, back home in India.

In India, in any part of the country morning does not breaks so calmly, it is always noisy, lively and full of activity. Somewhere along the road you might spot an old woman removing the dried fallen leaves from the road with her rickety broom, a young boy cycling its way down the narrow lanes to distribute the daily newspaper before going to his school, the road side tea stalls stacked with jars of rusks biscuits, brewing their morning cuppa, an old couple doing yoga in a park, and in a distance you can hear the sound of temple bells chiming once or twice, auto rickshaws are waiting for their first passenger of the day and the fruit sellers, the flower sellers all are busy doing some brisk business in the morning…

…and all these makes life so exciting, so colorful and by the time you reached home, you had loads of stories to share with your family…”you know….what happened..today…that girl is jogging with new boyfriend…that fruit seller near the temple has charged you extra today for a single coconut…the autowallah is asking for double fare…these municipalty people are good for nothing…they never clean the gutters and wastebins…morning news paper…what sale ?? 50% off…blah..blah…”

Sweating profusely after a walk of 3 miles, I reached home … smiling to myself, and as I sipped quietly my morning coffee, chewing up the chocolate cookies that I baked yesterday, I reflect on my todays post and within seconds the story starts developing in my mind, brimming with words…how the mornings can be so different, one is so silent and the other is so lively…

This rich chocolate cookie has deep and intense flavour, specks of white chocolate drops looks so tempting and it was so light and airy…before I reached out for another one…somebody stopped me in the middle…wait..they are yet to be photographed for blog…what??? hmmm…

Preheat oven to 350 F.

Line the cookie sheet with parchment paper or spray it with oil.

In a bowl, beat the butter and sugar until light and fluffy, add the brown sugar too and beat for few more minutes.

Add the egg and vanilla extract until well incorporated.

In a separate bowl, sift the flour with salt and baking powder, add the cocoa and mix it well with the help of a balloon whisk.

Add the flour and cocoa mixture slowly to the butter-egg mixture and beat until just incorporated.

Fold in the white chocolate chips.

With the help of an ice cream scoop or small round spoon, place 1 tablespoon of batter in the prepared cookie sheet, leaving a space of 5 cm in between.

Bake for approximately 8-10 minutes, until the edges are firm and crisp but centre is still soft.

Remove from the oven and let cookies cool on baking sheet for another 5 minutes before removing them to a wire rack to cool completely.
