Ingredients

  • 16 ounce fat-free refried beans
  • 4 ounce green chiles liquid removed and diced
  • 10 3/4 ounce low sodium tomato soup, canned
  • 10 3/4 ounce reduced fat reduced sodium cream of
  •     mushroom soup
  • 14 1/2 ounce no salt added stewed tomatoes - stewed
  • 2 can water
  • 2 clv garlic -- chopped
  • 1 med onion -- chopped
  • 9 ounce low sodium canned corn liquid removed
  • 1 c. red wine
  • 1 Tbsp. chili pwdr
  • 1/2 tsp cumin
  • 1/4 tsp pepper
  • 1/2 c. rice -- uncooked
  • 1/2 tsp oregano
  • 1 c. low sodium cheddar cheese shredded
  • 2 ounce red and green bell peppers
  • 1/2 c. rice -- uncooked

Directions

  1. Combine all the ingredients, except cheese, in a large pot or possibly Dutch oven.
  2. Stir to breakup beans. Heat over medium heat till soup comes to a boil.
  3. Reduce heat to low and simmer for 30 min. Sprinkle with cheese before serving.
