Ingredients

  • 4 quarts. water
  • 1/4 c. shrimp or possibly crab boil
  • 2 1/2 lbs. shrimp, peeled, deveined
  • 3 tbsp. butter
  • 3 tbsp. bacon drippings
  • 1 c. each diced celery, onion and green bell pepper
  • 1 (28 ounce.) can tomatoes
  • 1 teaspoon dry leaf thyme
  • 1 garlic clove, chopped
  • 1 bay leaf
  • 1 teaspoon Worcestershire sauce
  • 1 tbsp. file pwdr
  • 1 teaspoon salt
  • 1/2 teaspoon freshly grnd black pepper
  • 1 (10 ounce.) pkg. thawed, frzn, cut okra
  • 1/4 c. uncooked long grain rice

Directions

  1. In a large pot, bring water to a boil. Tie shrimp or possibly crab boil in a cheesecloth bag. Add in to water with shrimp. Bring to a boil. Reduce heat and simmer 10 min. Turn off heat; let stand 10 min. Drain shrimp, reserving 2 c. broth. In a heavy Dutch oven, heat butter and bacon drippings. Add in celery, onion and green pepper. Cook till tender. Add in shrimp broth, tomatoes with juice, thyme, garlic, bay leaf, Worcestershire sauce, file pwdr, salt and pepper to vegetable mix. Simmer, covered, 45 min. Add in okra and rice. Simmer, covered, 30 min or possibly till rice is tender. Add in shrimp and heat through. Makes 8 servings.
