Texas Rice Dressing

Ingredients

  • 2 tbsp. flour
  • 2 tbsp. vegetable oil
  • 1 c. onion, minced
  • 1 c. celery, minced
  • 1/2 c. green pepper, minced
  • 2 cloves garlic, chopped
  • 1/2 pound grnd beef
  • 1/2 pound grnd pork
  • 1/2 pound chicken giblets, minced
  • 2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 c. chicken broth or possibly water
  • 3 c. warm cooked rice
  • 1 c. green onion tops, sliced

Directions

  1. Brown flour in oil till it is a deep red-brown, stirring constantly to prevent burning. Add in onions, celery, green pepper, and garlic. Cook till vegetables are tender. Stir in beef, pork, giblets, and seasonings; continue cooking till meat loses its color.
  2. Blend in broth; cover and simmer 25 min. Stir in rice and onion tops; cook 5 min longer. Mix should be slightly moist. Makes 6 servings.
