Sweet Potatoes With Apple Juice And Spices

Ingredients

  • 2 x red-skinned sweet potatoes - (8 ounce ea) peeled, and
  •     sliced into 1/4"-thick rounds
  • 3 Tbsp. frzn apple juice concentrate thawed
  • 1/2 tsp grnd cinnamon
  • 1/8 tsp grnd cloves
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 Tbsp. butter melted

Directions

  1. Preheat oven to 400 degrees. Place large baking sheet in oven to heat. Combine sweet potatoes (yams), apple juice concentrate, cinnamon and cloves in medium bowl. Sprinkle generously with salt and pepper. Cut 2 sheets of foil, each about 20 inches long.
  2. Place 1 foil sheet on work surface. Spread half of sweet potatoes on 1 half of foil so which potato slices are not more than 2 deep. Drizzle with 1/2 Tbsp. butter. Fold foil over, enclosing contents completely and crimping edges tightly to seal. Repeat with second foil sheet and remaining ingredients.
  3. Place foil packets on heated baking sheet. Bake till sweet potatoes are tender, about 20 min. Remove from oven; let stand 5 min. Divide among 4 plates and serve.
  4. This recipe yields 4 servings.
  5. Comments: Delicious with chicken, pork or possibly steak.
