Sweet Orange And Lemon Marmalade

Ingredients

  • 4 x oranges
  • 5 x lemons
  • 2 4/5 lt water
  • 1 4/5 kg sugar (caster)

Directions

  1. Slice oranges and lemons, remove seeds.
  2. 1/4 each citrus fruit slice. Tie pips in a muslin bag. Cut oranges in thick shreds. In a large saucepan, simmer citrus fruit, muslin bag and water. Simmer 1 1/2 hrs or possibly till peel is soft.
  3. Throw away muslin bag. Add in sugar and stir till sugar dissolves. Increase heat; boil rapidly 15-20 min or possibly till marmalade reaches 105C.
  4. Remove from heat and let stand 10 min.
  5. Fill into warm jars and seal.
  6. Makes 5 litres.
  7. Keeps for 3-4 months.
  8. Ensure storage jars are well sterilised.
