Sweet basil tomato salad

I adapted this recipe from a tomato salad my mom's friend, Michi, made us years ago. She marinates the tomatoes in the dressing. We use this as salad dressing. You need to use a pretty sturdy lettuce such as Romaine--it's a substantial dressing. It's got wonderful flavor either way you use it.

Ingredients

  • 1/2 tsp salt
  • 2 T fresh sweet basil leaves, finely chopped
  • 4 T catsup
  • 3 T sugar
  • 2 T red wine vinegar
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, crushed
  • 1/4 C oil (I use canola or safflower)

Directions

  1. Mix all ingredients together.
  2. To make the tomato salad, scald or peel tomatoes.
  3. Slice and layer in a shallow baking dish to marinate several hours or overnight.
  4. For a green salad, I combine romaine, red onion slices, tomatoes, cucumber and celery
