Surprise Your Friends and Relatives for the Holidays ~ Give the Gift of Healthy Homemade Flour Tortillas!

When all the neighbors have had enough fudge to last a lifetime, they will cheer when you knock on the door with this edible gift: healthy tortillas. Well, at least healthy-er. No lard – canola oil is a much more enlightened fat.

Flour tortillas are simple to make, and unless you are lucky enough to live near the border where there are taco stands and small businesses selling tortillas, these taste much fresher than store bought.

Unlike making pastry, you actually WANT the gluten to be developed and work in your favor, so you do everything the opposite of how you would make a pastry crust. You use HOT water. You work the dough a lot. The strechy-ness is what holds the tortilla together, so gluten is your friend.

The dough takes just minutes to stir together and then you let it rest. Then, rolling and cooking takes just a few more minutes.

You can whip up a dozen or two for the neighbors in no time. Then, just sit back and wait for the cheers!

Stir all ingredients together. Cover and let rest 30 minutes.

Separate dough into 12 small balls. Roll out dough into 1/8 – inch thickness.

Cook on hot griddle until lightly browned on both sides.
