Strawberry & Cacao Nibs Ice Cream

- 1 hour 10 mins
- ½ frozen banana
- ⅛ cup cacao nibs
- 6 frozen strawberries (save two to chop)
- ¼ cup Halo Top brand Vanilla Bean Light Ice Cream, softened
Combine all the ingredient into your blender and blend until smooth.
Transfer to a stainless steel bowl, mix in the chopped strawberries and freeze for about 1 hour.
scoop out and serve.

Who likes to stumble? I know your instinct is to say “Not me!”
But consider this. You are at the super market and you stumble upon an ice cream that is 70 calories for 1/2 cup and there is 7 grams of protein and only 4 grams net carbs. Now that’s my kind of stumbling.
I couldn’t wait to taste it. Halo Top Creamery has lemon, strawberry, chocolate and vanilla flavors. I tried the Vanilla Bean and the Chocolate. I like the vanilla bean better than the chocolate. Hmm. maybe I should make a bowl with vanilla and chocolate together.
Sorry I got side tracked there for a minute.
Anyway, I wanted to make a strawberry smoothie. But when I whipped this concoction together it was so thick and creamy that I decided to stick it in the freezer for a bit to see how it would turn out.
It was so absolutely delicious that I think history was in the making on this one in my kitchen.
