This is a wonderful recipe for a special occasion breakfast or brunch. I made this for a surprise birthday brunch and the guests loved it. Dont be afraid to get creative with the ingredients and be prepared for compliments!

Ingredients Convert Measures

  • 1 1/2 cups chopped onion
  • 1 cupchopped scallion
  • 3/4 lb mushrooms - sliced thin
  • 3 tablespoons olive oil
  • 2 red peppers - thin strips
  • Italian bread (french bread) cut into 1" cubes (9 cups)
  • 2 1/2 cups grated cheddar
  • 1 cup parmesan cheese
  • 9 large eggs
  • 4 cups half and half
  • 3 tablespoons dijon
  • Tobasco

Directions

  1. Cook onions, scallions & mushrooms in olive oil over low heat.
  2. Add peppers, salt and pepper. Cook 10 - 15 mins.
  3. Arrange 1/2 bread in 4 1/2 quart baking dish.
  4. Spread with 1/2 of veggie mix.
  5. Sprinkle 1/2 of cheese.
  6. Add remaining bread, top with remaining cheese.
  7. Wisk eggs, milk, mustard, tobasco, salt and pepper, pour over.
  8. Chill covered overnight.
  9. Let stand at room temp 1 hour.
  10. Bake at 350 for 50 mins to an hour.
