This is a wonderful recipe for a special occasion breakfast or brunch. I made this for a surprise birthday brunch and the guests loved it. Dont be afraid to get creative with the ingredients and be prepared for compliments!

Ingredients Convert Measures
- 1 1/2 cups chopped onion
- 1 cupchopped scallion
- 3/4 lb mushrooms - sliced thin
- 3 tablespoons olive oil
- 2 red peppers - thin strips
- Italian bread (french bread) cut into 1" cubes (9 cups)
- 2 1/2 cups grated cheddar
- 1 cup parmesan cheese
- 9 large eggs
- 4 cups half and half
- 3 tablespoons dijon
- Tobasco
Directions
- Cook onions, scallions & mushrooms in olive oil over low heat.
- Add peppers, salt and pepper. Cook 10 - 15 mins.
- Arrange 1/2 bread in 4 1/2 quart baking dish.
- Spread with 1/2 of veggie mix.
- Sprinkle 1/2 of cheese.
- Add remaining bread, top with remaining cheese.
- Wisk eggs, milk, mustard, tobasco, salt and pepper, pour over.
- Chill covered overnight.
- Let stand at room temp 1 hour.
- Bake at 350 for 50 mins to an hour.
