Steaming Vegetable Melange With Cheese

Ingredients

  • 1/4 lb broccoli cut into even-sized florets
  • 1/4 lb cauliflower cut into even-sized florets
  • 1 med yellow onion cut into 1-inch dice
  • 1/8 head red cabbage cut into 1-inch-wide wedges
  • 1 x red bell pepper seeded and cut into 1/4" rings
  •     Shredded parmesan cheese
  •     Shredded cheddar cheese
  •     Balsamic or possibly red wine vinegar
  •     Freshly grnd black pepper
  •     Salt to taste

Directions

  1. Layer the broccoli and cauliflower pcs in the bottom of a steamer, set over boiling water; cover and cook for about 2 min. Remove the lid and layer on the onion, then the cabbage and the red pepper. Replace the lid and continue steaming till all of the vegetables are just barely tender, about 4 to 5 more min.
  2. Arrange the vegetables in a bowl, sprinkle lightly with a bit of each cheese (just to add in a bit of flavor, but not to overwhelm the dish or possibly add in too much fat and calories). Finally, drizzle on a bit of vinegar and sprinkle lightly with a bit of freshly grnd black pepper and salt to taste.
