Spring Onion And Potato Cutlets Recipe
A simple recipe to use as a side dish.Would be great alongside rice dishes.We use this as a stuffing in spring rolls/samosa which goes well with Mint chutney and Tomato Ketchup.

Ingredients Convert Measures
- 500 gm potatoes
- 1/2 cup green part of spring onions,chopped
- 1/2 tbsp salt (or to taste)
- 1 tbsp red chillies powder
- 1/2 tbsp cumin seeds
- Pinch of nigella seeds (kalonji)
- 2 tbsp dried pomegranate seeds,optional
- 1 tbsp crushed coriander
- Fresh coriander leaves,chopped
- 1-2 eggs
- Bread crumbs as required
- Oil, for shallow-frying
Directions
- Boil,peel and mash potatoes.
- Add all ingredients except egg,crumbs and oil.Mix well.
- Make round/cylinder shaped cutlets,dip in beaten eggs and crumbs.
- Heat oil in a pan for shallow-frying.
- Place cutlets in oil and fry till both sides are crisp and golden brown.
- Serve hot with ketchup/chutney.
