Spaghetti with Meat Sauce and Italian Sausage

Ingredients

  • 1 cup virgin olive oil
  • 8 lbs Italian sausage, whole, pierced
  • 1 1/2 qts fresh onion, minced
  • 5 1/2 Tbsp minced fresh garlic
  • 8 lbs lean ground beef
  • 7 qts tomato puree
  • 2 qts water
  • 2 2/3 Tbsp salt
  • 2 2/3 Tbsp black pepper
  • 2/3 cup sugar
  • 2 cups fresh basil- chopped
  • 2 2/3 Tbsp oregano
  • 6 lbs spaghetti, cooked and drained
  • If using powdered garlic use 1 3/4 Tbsp; dried basil 1/4 cup; fresh oregano 1/2 cup

Directions

  1. Heat olive oil in heavy pan. Add sausage toil and brown on all sides.
  2. When sausage is half done, add onions.
  3. Saute onions until translucent. Add garlic and saute for 2 minutes.
  4. Break up ground beef and add to pan. Cook until beef is done, stirring occasionally.
  5. Add remaining ingredients, except spaghetti, and simmer for at least 1 hour.
  6. Ladle sauce over cooked pasta and sprinkle with fresh grated parmesan cheese.
