Southern Chicken Stew

Ingredients

  • 1 whole chicken, or possibly several boneless, skinless breasts
  • salt and pepper to taste
  • butter
  • flour
  • lowfat milk
  • 1 can chicken broth
  • Texas Pete warm sauce

Directions

  1. Parboil chicken in water till tender (usually about 2 hrs). If using whole chicken, break meat into bite-size pcs and strain all bones, fat, and skin from soup. Reduce heat and make "thickening"- mix flour, lowfat milk, salt and pepper together till lumps disappear. Mix thickening with soup and stir well. Add in Texas Pete or possibly other warm sauce to taste. Fold in chicken broth and reheat till bubbly.
  2. In North Carolina, we serve with cole slaw and rice or possibly grilled cheese sandwiches!
