Ingredients

  • 3/4 lb (12 oz) linguine, uncooked
  • 4 garlic cloves, minced
  • 2 tbsp Italian salad dressing
  • 1 (24 oz) jar spaghetti sauce
  • 1/2 cup drained oil-packed sun-dried tomatoes, finely chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp ground cayenne pepper
  • 1 lb uncooked medium size shrimp, peeled (tails left on), deveined
  • Grated Parmesan cheese, (optional)

Directions

  1. Cook linguine as directed on package, omitting salt.
  2. Meanwhile, cook and stir the minced garlic in salad dressing in a large skillet over medium heat 1 minute Stir in the spaghetti sauce, tomatoes, parsley and pepper. Bring to a simmer over medium-low heat.
  3. Drain the pasta, reserving 1/2 cup of the cooking water. Add shrimp, pasta and reserved cooking water to the sauce mixture in skillet. Cook 4 to 5 minutes or until shrimp turn pink, stirring occasionally. Serve topped with Parmesan cheese if desired.
