Ingredients

  • 100 gm Plain flour
  • 1 pch Salt
  • 1 x Egg
  • 50 ml Guinness
  • 50 ml Soda water
  • 100 gm Dublin bay prawns/large tiger prawns
  • 4 Tbsp. Flour on a plate
  •     Vegetable oil, to fry
  • 1 pkt Ready-made mashed potato
  • 100 gm Old potatoes, peeled
  • 1 x Onion
  • 1 x Egg
  • 2 Tbsp. Plain flour, (2 to 3)
  • 50 gm Watercress
  • 1 sm Cos lettuce
  • 1 x Orange
  • 1/2 x Orange pepper
  •     Extra virgin olive oil

Directions

  1. Heat the deep fat fryer to 170c.
  2. 1 Sieve the flour and salt into a large bowl. Make a well in the centre to break the egg into.
  3. 2 Add in half the beer and whisk to create a smooth batter. Gradually whisk in the remaining beer and soda water. Leave to rest. Heat 1" oil in a large saute/fry pan.
  4. 3 For the Boxty: Grate the remaining potato and onion and squeeze in a clean tea-towel to remove excess moisture. Place in the bowl with the mashed potato.
  5. 4 Break the egg into a small dish, beat and add in to the potato mix. Add in 2-3 tbsp flour, season and mix well.
  6. 5 Drop spoonfuls of the mix into the saute/fry pan and shallow fry for 3-4 min on each side, till golden and crispy.
  7. 6 For the Salad: Shred the lettuce and place in a bowl with the watercress.
  8. Deseed the pepper and slice lengthways. Add in to the bowl of salad.
  9. 7 For the Prawns: Remove the head, shell and tail. Dip each prawn in the flour and batter, and deep fry for 3-4 min, turning once during cooking.
