Rotini With Black Beans, Corn And Cilantro

Ingredients

  • 1/2 lb rotini
  • 2 Tbsp. oil
  • 1 x onion, minced
  • 2 clv garlic, minced
  • 2 x tomato, minced
  • 1 tsp coriander, seeds, crushed
  • 1 x 14 ounce tin corn, liquid removed
  • 1 x 14 ounce tin black beans, liquid removed, and, rinsed
  • 1 handf cilantro, minced

Directions

  1. Put the pasta on to cook. Heat a saucepan over medium-high heat, add in the oil.
  2. Add in the onion and garlic and cook for 2 min.
  3. Add in the tomatoes, coriander, corn and black beans and cook for 4-5 min.
  4. Add in the pasta and toss. Serve with minced cilantro sprinkled over top.
