Roasted Red Pepper Pseudo Hummus

Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 2 cloves garlic
  • 2 tablespoons fresh lemon juice
  • 1/3 cup olive oil
  • Salt &black pepper
  • 1 teaspoon dried oregano
  • 2 slices of jarred roasted red pepper in oil ( approx. a 1/3 cup)

Directions

  1. Put all ingredients into a food processor and blend until pureed. Serve in a dish with crackers, fresh veggies, or pita chips.
