Reduced Fat Tortellini soup

A great hearty soup. Wonderful for the cold winter months. Double the batch and it is great to bring in a crock pot to a gathering.

Ingredients

  • 20 oz Fit and Trim Chicken Sausage-combination of sweet and spicy italian (2 packages)
  • 1/2 medium onion
  • 2-4 cloves of garlic
  • 3 boxes of beef broth
  • 1 can of beef consomme + 1 1/2 cans of water
  • 1/2 cup of red wine
  • 2 cups of water
  • 1 9 oz package of fresh tortellini
  • 2 medium sized zucchini
  • 1 8 oz package of carrots
  • tablespoon of olive oil for saute
  • Optional:
  • Mushrooms
  • Spinach
  • Shredded parmesan cheese
  • French Bread for Dipping

Directions

  1. Cut onions, garlic, carrots, and zucchini into bite size slices
  2. Remove casing from sausage and crumble
  3. In a large pot, saute sasuage until browned.Add a couple tablespoons of red wine if sausage gets dry or starts to sick. Remove sausage from pot and set aside
  4. Saute onion and garlic until softened
  5. Combine sausage, carrots, zucchini, red wine, and beef broth in the pot.
  6. Simmer 35 minutes
  7. Add tortellini and simmer another 25 minutes
  8. Sprinkle with shredded parmesan cheese and serve with a crusty French Bread
