Red Beans And Rice (Crock Pot)

Ingredients

  • 1 x ham bone cracked
  • 1 lb small dry red beans soaked overnight,
  •     and liquid removed
  • 1 x onion minced
  • 3 x garlic cloves chopped
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 6 c. warm cooked rice
  • 1 c. minced green onions

Directions

  1. Place beans in bottom of crock pot and add in remaining ingredients, except rice and green onions, with 1 1/2 qts water. Cover and cook on HIGH 2 hrs. Turn heat to LOW and cook, covered, 10 to 12 hrs.
  2. Remove ham bone and mash some of the beans against the side of the pot to thicken the remaining liquid. Remove meat from bone and return meat to pot. Season with salt and pepper and serve with rice, topped with minced green onions.
