Shrimp with Corn Relish

We will host a dinner party this weekend and I was trying to come up with a few new appetizers to start the dinner off on a good note. As the theme will be Italian night I decided to take shrimp to a new level; serving it over some fried raviolis, just as a surprise. I will also do some seared tuna with white (cannelloni) beans. The pasta course is bolognese sauce over homemade fettuccine and the main course is bracoile and a whole baked red snapper.

We will be finishing up with tiramisu.

Heat the olive oil in an oven-proof pan; add the shrimp, and chopped garlic. Sauté for 3 minutes, until the shrimp begins to color. Remove from heat, add the chopped cherry tomatoes, chopped green peppers, white wine and garlic chili sauce and place in a pre-heated 350 degree oven for 5 minutes. Remove from oven and swirl in the butter until melted; add cilantro and salt and pepper.
