Ingredients

  •     " A taste of the Meditteranean in one delicious baked chicken dish.
  •     Note: This is a classic Chicken Mirabella recipe. "
  • 3 x cloves garlic, chopped
  • 1/3 c. pitted prunes, halved
  • 8 sm green olives
  • 2 Tbsp. capers, with liquid
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 2 x bay leaves
  • 1 Tbsp. dry oregano
  •     salt and pepper to taste
  • 1 x (3 lb.) whole chicken, skin removed and cut into pcs
  • 1/4 c. packed brown sugar
  • 1/4 c. dry white wine
  • 1 Tbsp. minced fresh parsley, for garnish

Directions

  1. In a medium bowl combine the garlic, prunes, olives, capers, extra virgin olive oil, vinegar, bay leaves, oregano, salt and pepper. Mix well. Spread mix in the bottom of a 10 x 15 inch baking dish. Add in the chicken pcs, stir and turn to coat. Cover and chill overnight.
  2. When ready to prepare, preheat oven to 350 degrees F (175 degrees C).
  3. Remove dish from refrigerator. Sprinkle brown sugar on top and pour white wine all around chicken.
  4. Bake in preheated oven for 1 hour, spooning juices over chicken several times as it is baking. Serve on a platter, pouring juices over the top, and garnish with fresh parsley.
  5. Makes 4 servings
