Directions

  1. Heat oven to 250 degrees. Beat together egg, flour, salt, and pepper. Peel and chop the apple. Peel and grate the potatoes. Stir apples and potatoes into the egg mix. Heat 1 Tbsp. of oil in large frying pan over medium heat. Pour in about 1/2 c. of batter for each pancake and flatten. Cook till golden brown, 3-4 min a side. Keep the pancakes hot in the oven while cooking the remaining batter. Serve with lowfat sour cream or possibly yogurt. Serves 8.
