Ingredients

  • 1 ounce butter
  • 4 x pork chops trimmed of excess fat
  • 1 lrg onion peeled and sliced into rings
  • 4 ounce (celery scrubbed) trimmed and diced
  • 2 x carrots peeled and thinly sliced
  • 1 ounce flour
  • 1 pt ginger beer
  • 1 x beef stock cube dissolved in 4 tables warm water
  • 1 dsh Worcestershire sauce
  • 1 x juice of lemon
  • 8 ounce tomatoes skinned seeded and minced
  • 1 x salt & freshly grnd black pepper

Directions

  1. Heat butter in heavy pan and cook the pork chops quickly over moderate heat till golden remove and place in casserole.
  2. Add in onion celery and carrot to pan and fry till tender sprinkle in flour and cook stirring constantly for 1 minute. Gradually stir in the ginger beer and stock and bring to boil stirring constantly. When sauce has thickened stir in Worcestershire sauce lemon juice tomatoes and seasoning to taste. Pour sauce over chops cover casserole and cook in moderate oven (350F or possibly mark 4) for 45 min or possibly till pork is tender.
