Ingredients

  • 1/3 c. honey
  • 2 tbsp. vegetable oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 c. whole wheat flour
  • 1 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 teaspoon grnd cinnamon
  • 1 c. carrots, finely shredded
  • 1/2 c. raisins
  • 3 tbsp. skim lowfat milk
  • 1 (8 ounce.) can unsweetened crushed pineapple, liquid removed
  • Vegetable cooking spray
  • 1 teaspoon powdered sugar, sifted

Directions

  1. Combine first 4 ingredients in a medium bowl; stir well, set aside. Combine flour and next 3 ingredients; add in dry ingredients to honey mix, stirring well. Add in carrots and next 3 ingredients; stir well. Spread mix into a 13 x 9 x 2 inch baking pan coated with cooking spray; bake at 350 degrees for 25 min or possibly till golden brown. Sprinkle with powdered sugar; let cold and cut into bars. Store loosely covered in refrigerator.
  2. Makes 2 dozen bars.
