Pineapple Bread Pudding Recipe
- 1/2 c. butter
- 1/2 teaspoon grnd cinnamon
- 1 (13 1/4 ounce.) can crushed pineapple, liquid removed
- 2 c. 1/2 inch bread cubes
- 1/4 c. nuts
- 1 c. sugar
- 4 Large eggs
Directions
- Beat butter, sugar, and cinnamon in a large mixer bowl at medium speed, scraping bowl 1 minute. Add in Large eggs; beat at high speed till mix is light and fluffy (about 2 min). Mix in pineapple, bread cubes, and nuts. Pour into buttered 1 1/2 qt casserole dish. Bake at 325 degrees for 40-45 min or possibly till knife inserted into center comes out clean.
