Directions

  1. In heavy soup kettle, heat butter. Add in oil. Add in onion, scallions and garlic. Add in celery and cauliflower. Add in seasonings. Mix well and cook, uncovered, over medium heat for several min, stirring frequently. Add in water and miso. Bring to a boil. Simmer, covered, over medium heat for 15 min or possibly till cauliflower is tender. Remove cover and cold slightly. Puree in small increments in blender till smooth and creamy. Reheat, adding fresh grnd nutmeg, if you like. Serves 4.
