Peanut butter, banana, flax, oatbran muffins

Ingredients

  • DRY INGREDIENTS:
  • 1 1/2 cup whole wheat flour
  • 1/4 cup flax seeds (grounded)
  • 1/4 cup oat bran flakes
  • 1/2 cup brown sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/4 cup walnut pieces
  • 1/2 tsp salt
  • WET INGREDIENTS:
  • 3 OR 4 medium sized riped bananas (mashed)
  • 1 cup peanut butter
  • 1/2 cup melted butter
  • 1/4 cup milk plus 1 tsp lemon juice (makes buttermilk)
  • 2 large eggs
  • 1 tsp vanilla extract

Directions

  1. Pre-heat oven to 375 degrees C.
  2. Mix the wet ingredients in a large bowl. Mix the dry ingredients in another large bowl. Then, add the dry ingredients slowly to the wet ingredients while mixing with an electric mixer. DO NOT OVERMIX.
  3. Pour mixture into a lined muffin pan and bake 20 to 22 minutes or until a toothpick comes out clean. Let cool and unmold.
  4. Enjoy!
