Ingredients

  • 2 x catfish fillets
  • 3 Tbsp. margarine, low-fat
  • 1 c. artichoke hearts, sliced
  • 1 x red pepper, cut in julienne stri
  • 1 x carrot, cut in julienne stri
  • 1 x zucchini, cut in julienne stri
  • 2/3 c. low fat lowfat milk
  • 1/4 lb angel hair pasta, or possibly vermicelli
  • 1/2 c. grated parmesan cheese
  • 1/4 tsp grnd nutmeg

Directions

  1. Cut catfish in half crosswise and slice into thin strips. Saute/fry catfish in melted margarine; add in the vegetables and cook till tender. Stir in low fat lowfat milk; keep hot.
  2. Cook pasta according to package directions, drain. Toss well with cheese and catfish mix. Sprinkle with nutmeg and serve immediately.
  3. Serve with fresh salad and French bread.
