Pan Fried Chicken Etouffee (Cajun)

Ingredients

  • 2 ounce Vegetable oil
  •     Flour - sufficient to bread chicken
  • 1/2 x Chicken, cut into 4 pcs
  • 1 tsp Cajun seasoning
  • 1/4 c. Celery, onion, pepper, diced
  • 1/4 c. Diced fresh tomato
  • 1 Tbsp. Green onions
  • 1 Tbsp. Flour
  • 1 c. Chicken stock

Directions

  1. Dredge chicken in flour. Heat skillet with vegetable oil. Fry chicken on each side for 8 - 10 min till chicken reaches 165 degrees F. Remove chicken and throw away some oil (about 1/2). Add in a heaping Tbsp. of flour to the pan and whip till light brown. Add in celery, pepper, onion, tomato, and cajun spice. Whip in chicken stock till smooth. Serve sauce over chicken. Garnish with green onion.
