Oven Fried Rice Krispies Chicken With Andouille Sausage

Ingredients

  • 8 x Skinless, boneless chicken breasts (or possibly 6 skinless thighs and 4 breast halves)
  • 4 c. Rice Krispies
  • 2 tsp Cumin
  • 1 1/2 tsp Granulated garlic
  • 2 Tbsp. Paprika
  • 3/4 c. Fresh parmesan cheese, grated
  •     Salt and pepper
  • 2 x Large eggs
  • 6 ounce Andouille sausage, minced
  • 1 c. Fat free plain lowfat yoghurt
  •     Minced parsley
  • 1 tsp Cumin

Directions

  1. Saute/fry andouille sausage and drain on paper towels to remove excess fat.
  2. Roughly crush Rice Krispies in plastic bag with rolling pin.
  3. Put Rice Krispies in large flat bowl and add in cumin, garlic, paprika, parmesan cheese, salt and pepper to taste. Stir in parmesan cheese and cooled andouille sausage.
  4. 3.In another flat dish, beat the Large eggs. Dip chicken in Large eggs, then in dry mix, pressing to coat. Put chicken on baking sheet which has been sprayed with Pam. Bake in 350 degree oven for 30 min. Garnish with minced fresh parsley and grape tomatoes.
  5. Sauce: Add in 1 tsp. cumin and 1 Tbsp. minced parsley to 1 c. fat free lowfat yoghurt. Serve sauce on the side.
