Orzo Salad with Sun-dried Tomatoes and Feta Recipe by Michele Grason.

This is my summer potluck go-to recipe! You can add pinenuts and fresh cherry tomatoes or you could just add the orzo, sun-dried tomatoes, feta and basil. It is so easy to make and it's even better the next day!

Ingredients Convert Measures

  • 1 package orzo pasta cooked according to the package
  • 1 jar sun-dried tomatoes in oil - diced
  • 1 package crumbled feta cheese
  • 1 bunch basil - cut in slivers
  • 4-6 green onions - diced
  • 1 bell pepper - diced
  • 2 cloves of garlic - minced
  • Olive oil and balsamic vinegar (about 1/4 cup oil and 1/4 cup vinegar)
  • salt and pepper to taste

Directions

  1. Add diced sun-dried tomatoes and the oil from the jar into the pasta and toss.
  2. Toss all other ingredients into salad.
  3. Add oil and vinegar and salt and pepper to taste.
