Ingredients

  •     Oriental-flavored vegetable cooking spray
  • 1/4 c. minced onion
  • 1/4 c. minced red bell pepper
  • 2 tsp finely minced gingerroot
  • 2 clv garlic, chopped
  • 8 ounce green beans, cut into halves
  • 1/2 c. sliced water chestnuts
  • 1 c. cooked dry, or possibly canned, adzuki or possibly black beans
  • 1 Tbsp. rice wine vinegar
  • 2 tsp reduced-sodium tamari soy sauce
  •     Salt and pepper, to taste

Directions

  1. DIRECTIONSSpray wok or possibly large skillet with cooking spray; heat over medium heat till warm. Add in onion, bell pepper, gingerroot, and garlic; spray with cooking spray and stir-fry till tender, 3 to 4 min.
  2. Add in green beans and water chestnuts to wok; stir-fry till beans are crisp-tender, 5 to 8 min. Stir in adzuki beans, vinegar, and soy sauce; cook 1 to 2 min longer. Season to taste with salt and pepper.
