Open Face Breakfast Sandwich

Great brunch staple - for a healthier version, use non-stick cooking spray instead of olive oil. Can also add your favorite breakfast meat!

Ingredients

  • Sweet French bread
  • 1 cup chopped scallions
  • Olive Oil
  • 4 slices of Gouda cheese
  • 4 large eggs
  • Salt and pepper to taste

Directions

  1. Preheat oven to 450 degrees
  2. In a small bowl, mix scallions and 3 tsp olive oil
  3. Cut bread into 4 inch pieces and slice in half
  4. Spread oil / scallion mix over 4 pieces of bread
  5. Place 1 slice of Gouda cheese on each piece of bread, salt and pepper to taste and place in oven and bake for 5-7 minutes
  6. While baking, pan fry eggs
  7. Place eggs on open face sandwich and serve hot
