One-Bowl Fudge Brownies with Peanut Butter Frosting Recipe

Any time you put the words “fudge” and “peanut butter” together, only good things can come of it. Toss the word “brownies” in there and it’s certain to be a winner! It didn’t take very long for this plate of brownies to disappear, and the peanut butter frosting was a big hit.

These would be great for taking along to someone’s house, perfect for the holidays. However, I would suggest wrapping the brownies in foil and packing the frosting into a plastic container with a lid. When you arrive, you can frost them right there, much to the delight of your hostess I’m sure. This way you’ll avoid the foil or container sticking to your frosted brownies making a big mess. Just don’t forget to take your pan home with you. Empty. Of course.

These brownies are nice and fudgy and the frosting keeps you from eating too many. *wink* Just rich enough to make you aware of when you say enough (for now).

Start off by melting the butter and chocolate in a large bowl in the microwave for 1 minute. Stir, continue heating at 20 second intervals until chocolate is completed melted and smooth. Allow to cool.

Add sugar to the chocolate and stir until combined.

Add eggs and beat with wooden spoon or rubber spatula until combined. Stir in vanilla.

Stir in the flour and baking soda just until combined.

Spread the batter into the prepared pan and bake for 30 minutes.

Allow to cool completely in the pan on a wire rack.

Frost the brownies while still in the pan. Remove brownies from pan by lifting the sides of the parchment and place on a cutting board.

Cut into bars.

Instructions

Preheat oven to 350 F and line an 8x8 baking pan with parchment paper, allowing parchment to hang over the sides.

Spread the batter into the prepared pan and bake for 30 minutes. Allow to cool completely in the pan on a wire rack.

Prepare the Frosting

Combine butter and cream cheese in a medium mixer bowl and beat until creamy. Gradually add the powdered sugar a cup at a time, mixing thoroughly after each addition. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes. Add the peanut butter and beat until thoroughly blended.

Frost the brownies while still in the pan. Remove brownies from pan by lifting the sides of the parchment and place on a cutting board. Cut into bars.
