Ingredients

  • 2 med. onions, minced
  • 1/4 c. extra virgin olive oil
  • 1 pound grnd beef
  • 8 ounce. tomato sauce
  • 2 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 pound cottage fries, unthawed
  • Parmesan cheese
  • 2 beaten Large eggs
  • 1 c. lowfat milk

Directions

  1. Saute/fry onions in extra virgin olive oil till soft. Add in grnd beef and saute/fry till redness disappears. Add in next 5 ingredients (tomato sauce through cumin) and stir well. Place mix in greased casserole in 2 layers, topping each layer with 1/2 lb. cottage fries. Sprinkle with Parmesan cheese. Mix lowfat milk and Large eggs and pour over top. Bake 45 min at 350 degrees. Serves 4.
