Ingredients

  • 1/2 cup olive oil
  • 8 lbs italian sausage links
  • 1 1/2 qts onions
  • 1/3 cips fresh minced garlic
  • 8 lbs ground beef
  • 2 cups fresh chopped basil
  • 2 2/3 Tbsp salt
  • 2 2/3 Tbsp black pepper
  • 2/3 cups sugar
  • 2 2/3 Tbsp dried oregano
  • 2 gals tomato puree
  • 1 1/4 gals water
  • 4 lbs lasagna noodles- cooked
  • 3 qts ricotta cheese
  • milk if needed
  • 4 qts mozzarella cheese- grated
  • 2 cups parmesan cheese- grated
  • 3 tsps salt
  • 3 tsps pepper
  • if using powdered garlic 2 Tbsp; dried basil 1/2 cup; fresh oregano 1/2 cup

Directions

  1. for sauce: pierce sausage several times- heat olive oil, add sausage and brown all sides
  2. when sausages are browned, add onions and cook until clear
  3. add garlic and saute for 30 seconds
  4. add ground beef and brown- stirring often
  5. add the next 6 spices to mixture- stir to blend, saute 3 minutes
  6. add tomato puree and water- simmer slowly for at least 1 1/2 hours- taste and adjust seasonings if needed
  7. assembly: prepare 2 pans
  8. cook noodles in salted boiling water until al dente- drain and rinse under cold water and set aside
  9. remove sausage from sauce and let cool- slice into 1/2" sausage coins
  10. spread 2 cups of meat sauce over the bottom of a 12x20" steamtable pan
  11. cover the bottom of the pan with layer of lasagna noodles
  12. if needed- thin ricotta slightly with milk so it is easy to spread
  13. spread 2 cups of ricotta cheese over noodles, sprinkle with 3 1/4 cup mozzarella and 1/4 cup parmesan
