Ingredients

  • 2 (10 ounce.) pkg. frzn mixed vegetables
  • 1/2 c. (2 ounce.) shredded lowfat process American cheese
  • 1 (8 ounce.) can sliced water chestnuts, liquid removed
  • 2 tbsp. minced onion
  • 2 tbsp. low-calorie mayonnaise substitute
  • Vegetable cooking spray

Directions

  1. Cook mixed vegetables according to package directions, omitting salt and fat. Drain. Combine cooked mixed vegetables, cheese, water chestnuts, onion, and mayonnaise substitute, stirring gently. Spoon mix into a 1 1/2 qt casserole dish coated with cooking spray. Bake at 350 degrees for 20 min or possibly till thoroughly heated. Yield: 8 servings.
