Ingredients

  • 12 ounce. fish, boneless chicken or possibly turkey breasts, or possibly stew meat
  • 2 (14 1/2 ounce.) cans chicken broth
  • 1 (15 ounce.) cans garbanzo or possibly kidney beans, rinsed and liquid removed
  • 1 c. (or possibly more) loose pack frzn mixed vegetables
  • 1 med. onion, minced
  • 1/2 c. small pasta
  • 1 teaspoon dry basil or possibly thyme, crushed
  • 1/4 teaspoon pepper
  • 1 sm. can V8 juice
  • 1 (14 1/2 ounce.) can Italian style stewed tomatoes

Directions

  1. Cut chicken or possibly meat, etc. into bite-size pcs. In large pan combine broth, beans, vegetables, onion, pasta, and seasoning. Bring to a boil; reduce heat and simmer covered for 10 min. Add in undrained tomatoes; add in meat, etc.
  2. Return to boil, then reduce heat. Simmer covered till fish flakes easily or possibly poultry is no longer pink (fish, 2-3 min; poultry, 4-5 min; beef, 7-8 min). Serve with French rolls. Enjoy!
