Ingredients

  • 4 sht Reynolds Wrap heavy-duty aluminum foil - (12" x 18" ea)
  • 4 x cod fillets - (4 to 6 ounce ea)
  • 2 c. frzn whole kernel corn
  • 1/2 c. minced green or possibly red bell pepper
  • 1/2 c. salsa
  • 1/4 c. minced fresh cilantro

Directions

  1. Preheat oven to 450 degrees or possibly preheat grill to medium-high. Spray foil with nonstick cooking spray. Place one cod fillet on each sheet of foil. Top with corn, green pepper, and salsa.
  2. Bring up sides of foil and double fold. Double fold ends to create four packets, leaving room for heat circulation inside packets.
  3. Bake 18 to 22 min on a cookie sheet in oven or possibly grill 10 to 12 min in a covered grill. Sprinkle with cilantro before serving.
  4. This recipe yields 4 servings.
