Mexican Chorizo Breakfast Pie

Flour tortillas are the foundation of this egg, cheese, and chorizo pie. Serve with salsa and fresh tortillas.

Ingredients

  • 3-6 flour tortillas
  • 1/2 lb. chorizo, cooked
  • 1 small onion, diced
  • 2-3 cloves chopped garlic
  • 1 tbs. olive oil
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 tsp. each ground cumin, chili powder, oregano
  • 2 cups shredded cheese, divided
  • 1/2 cup smashed tortilla chips
  • 1/4 cup chopped cilantro
  • salt and pepper to taste
  • garnish: paprika

Directions

  1. Heat oven to 375 degrees.
  2. Layer bottom and sides of a 9 inch pie plate with the flour tortillas.
  3. Cook the chorizo, drain.
  4. Saute the onions and garlic in the olive oil.
  5. Beat eggs with milk, add all other ingredients to the eggs, keeping back 1 cup cheese,
  6. Place the pie plate on a baking sheet, then fill the pie plate with the egg, cheese, chorizo mixture.
  7. Bake 35-45 minute, check if center is done.
  8. When done, cut off oven, sprinkle cheese and paprika on toop of the pie, leave in the oven 10 minutes.
  9. Let cool 10 minutes before serving.
