Ingredients

  • 1 pound grnd beef
  • 1 c. soft bread crumbs
  • 1/4 c. each celery & onion
  • 1 1/2 teaspoon Worcestershire sauce
  • 1 egg
  • 1 (16 ounce.) can stewed tomatoes
  • 2 1/2 c. zucchini
  • 1/2 teaspoon each oregano, basil & sugar
  • 1 tbsp. cornstarch
  • 1 c. beef broth
  • 3 c. cooked rice

Directions

  1. Combine beef, bread crumbs, onion, celery, Worcestershire sauce, egg, 1 1/2 tsp. garlic, salt and pepper. Form 12 meatballs, bake 375 degrees for 20 min.
  2. Meanwhile, combine tomatoes and zucchini with remaining seasonings and simmer 5 min. Blend cornstarch and broths. Stir into tomato mix. Pour over meatballs; continue baking 10 min longer. Serve over beds of fluffy rice. Makes 6 servings.
