Ingredients

  • Pastry for one 9 inch pie - use your favorite recipe
  • 16 ounce. can pumpkin
  • 8 ounce. pkg. cream cheese, softened and cut into pcs
  • 3/4 c. packed brown sugar
  • 2 lg. Large eggs
  • 1 1/2 tbsp. flour
  • 1 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/2 c. whipping cream
  • 2 teaspoon vanilla extract

Directions

  1. Prepare pastry. Fit the pastry into 9 x 1 3/4 inch pie pan. Crimp edges. Preheat oven to 425 degrees. In a bowl, combine pumpkin, cream cheese, brown sugar and Large eggs. Beat with a mixer till well blended. Add in flour and spices, then cream and vanilla. Beat till thoroughly blended. Pour pumpkin mix into the pastry lined pie pan. Bake for 15 min at 425 degrees, then lower heat to 350 degrees. Continue to bake an additional 30 min or possibly till set. Let cold on a rack. Serve pie hot or possibly chilled. Makes one 9 inch pie.
