Ingredients

  • 2 x egg whites
  • 1 slc white bread -- cubed
  • 1 lb lean grnd pork
  • 2 c. finely shredded cabbage
  • 1/4 c. grated onion
  • 1/2 tsp sugar
  • 1/2 tsp grnd black pepper
  • 1/4 tsp grnd coriander
  • 1/8 tsp grnd nutmeg Vegetable cooking spray
  • 8 ounce sliced fresh mushrooms
  • 1 c. water
  • 1 Tbsp. Dijon mustard
  • 1 tsp beef bouillon granules
  • 2 Tbsp. water
  • 1 Tbsp. cornstarch -- plus 1 tsp.

Directions

  1. Combine egg whites and bread cubes in a large bowl; let stand 5 min. Add in pork and next 6 ingredients; stir well. Shape mix into six patties.
  2. Coat a large nonstick skillet with cooking spray; place over medium heat till warm. Add in pork patties and cook 7 min on each side. Drain and pat dry with paper towels. Wipe drippings from skillet with paper towel.
  3. Coat skillet with cooking spray and place over medium-high heat till warm.
  4. Add in mushrooms and saute/fry till tender. Stir in 1 c. water, mustard, and bouillon granules, stirring well. Return pork patties to skillet. Cover, reduce heat, and simmer 10 min. Transfer patties to a large serving platter.
  5. Combine 2 Tbsp. water and cornstarch; stirring well. Add in to mushroom mix and cook just till thickened, stirring constantly. Spoon over patties and serve immediately.
  6. Yield: 6 servings.
