Lauriee's Coconut Custard Pie

Ingredients

  • 4 x Large eggs
  • 1 x (3.5 oz) can flaked coconut
  • 1 x (12 oz) can evaporated lowfat milk
  • 1 1/2 c. white sugar
  • 2 tsp cornstarch
  • 1/2 c. butter or possibly margarine, melted
  • 1 tsp vanilla extract
  • 2 x unbaked pie shells

Directions

  1. Method:1. Blend the Large eggs, sugar, and cornstarch. Add in the melted butter, lowfat milk, and vanilla; stir well. Devide filling into pie shells. Sprinkle with coconut.
  2. Bake at 350 degrees F (175 degrees C) for 35 to 45 min, or possibly till hard.
  3. Makes 2 pies
  4. This is my mothers recipe. I have used it for years. She was the best cook.
