Ingredients

  • 1/4 lb salt pork
  • 1 1/2 lb fresh Lady peas Cool water
  • 1 tsp bacon grease
  • 1 tsp sugar 1 ts salt, or possibly to taste)
  • 1 x Onion, quartered
  • 1/4 x Warm pepper, optional Cut slits in washed and dry salt pork.

Directions

  1. In medium sized saucepan cover meat with about a qt of cool water.
  2. Boil, covered, till meat is tender and water has evaporated down to about a cupful. Add in another qt of cool water to the meat.
  3. Add in peas, bacon grease, sugar, onion and warm pepper. Bring to a boil, cover again and lower fire to medium low.
  4. When peas have become slightly tender - about 30 min - add in salt.
  5. Continue cooking till tender and tasty, usually about 20 min.
  6. Serves 6 - 8.
