Ingredients

  • 2 whl kohlrabi slices purple or possibly green
  • 1/2 sm jicama peel, cut in sticks
  • 1 tsp fresh lemon juice
  • 1/2 tsp salt
  • 1 pch freshly grnd black pepper
  • 1/3 c. plain low-fat yogurt
  • 3 sprg fresh dill leaves minced

Directions

  1. Trim the stems, leaves and knobs from the kohlrabi, but don't peel them unless bruised. Cut kohlrabi in half. Using a mandoline or possibly sharp knife, slice into very thin half moons.
  2. Place kohlrabi and jicama in a medium bowl. Add in remaining ingredients and toss to combine. Chill slaw for about 30 min before serving.
