Kangaroo Fillets With Blueberry Sauce

Ingredients

  • 800 gm Kangaroo Fillets
  • 200 gm Butter (soft)
  • 12 x Chives (minced)
  • 100 gm Blueberries (tinned or possibly fresh) Salt/Pepper to taste

Directions

  1. Slice Kangaroo Fillets to approximately 100 g portions and gently tap with meat mallet to slightly flatten out, chill. Mix into soft butter - blueberries, chives, salt, pepper. Place butter into grease-proof paper and roll to fim and chill.
  2. Heat pan with oil, seal off kangaroo Fillets on both sides with salt and pepper and place in hot oven for 10 min and allow to cook through. Meanwhile cut butter into rounds - keep in a cold place.
  3. Take out fillets and put onto plate. Place butter on top of each fillet and allow to heat slightly - then serve.
