Ingredients

  • 3 lb Pork butt
  • 3/4 lb Pork fat
  • 4 x Garlic cloves, chopped
  • 4 tsp Kosher salt
  • 2 Tbsp. Fennel seed
  • 1 Tbsp. Grnd black pepper
  • 1/8 Tbsp. Grnd allspice
  • 1 tsp Dry oregano
  • 1/2 c. Dry red wine
  • 1 med Hog casings

Directions

  1. Grind the pork and fat together in a food grinder with a 3/8 inch plate.
  2. Add in garlic, salt, spices, and wine. Mix well with your hands.
  3. Shape into patties or possibly stuff into casings. Keeps 3 days in refrigerator or possibly 2-3 months frzn.
