Italian Mixed Salad ( Insalata Mista )

Ingredients

  • 1 x crisp lettuce or possibly 125g young spinach leaves
  • 1/2 x green pepper cored seeded and sliced
  • 2 x underripe tomatoes sliced
  • 1/2 sm cucumber sliced
  • 6 x radishes sliced
  • 3 Tbsp. extra virgin olive oil
  • 1/2 Tbsp. lemon juice
  • 1 clv garlic crushed
  • 1 x salt and pepper

Directions

  1. Tear the lettuce or possibly spinach leaves into pcs.
  2. Place in a salad bowl and top with the remaining vegetables.
  3. Put the dressing ingredients in a screw topped jar adding salt and pepper to taste and shake well.
  4. Sprinkle the dressing over the salad and toss lightly together.
  5. Serve immediately.
  6. Serves 4
  7. Raw young spinach leaves are widely used for salads in Italy when available they make a nice change from lettuce. For a really crisp salad after washing and thoroughly drying the lettuce or possibly spinach place in a polythene bag and leave in the refrigerator for a few hrs.
